The Internship Implementation Principles of the Gastronomy and Culinary Arts Department within the Faculty of Fine Arts, Design and Architecture at Toros University provide a comprehensive framework covering pre-internship preparations, rules to be followed during the internship, reporting requirements, and post-internship submission procedures. Within the program, students are required to complete a compulsory internship of 30 working days between the fourth and fifth semesters. This process aims to reinforce theoretical knowledge acquired in coursework through practical, sector-based experience. The internship is systematically monitored and evaluated in alignment with learning outcomes through practices such as daily reporting, documentation of production processes, and the use of visual materials. Furthermore, internship guidelines are communicated to students via the university website, the departmental internship commission, academic advisors, and orientation meetings, while all necessary documents and forms are made accessible online.
Internships enable students to develop practical competencies in core culinary techniques, hygiene and sanitation, production processes, recipe standardization, and operational workflows, while also fostering professional ethics, discipline, responsibility, and teamwork skills. The department offers a wide range of internship opportunities in accommodation establishments, restaurants, catering companies, airline services, ship kitchens, and food industry R&D departments, both domestically and, when approved, internationally. Internship placements are evaluated based on defined criteria in line with students’ preferences, and the process is supported through regular monitoring and feedback mechanisms. However, the limited number of academic staff may pose constraints in providing continuous, one-to-one supervision throughout the internship period. Nevertheless, the sharing of evaluation results via the Student Information System and through direct feedback contributes significantly to guiding students’ professional development.
